Chocolate-covered Marshmallows

Wanna make a simple sweet treat for a children’s party but you don’t have much time or skills? Try making these chocolate-covered marshmallows that we made for my niece Paige’s birthday party.

First, make a ganache. WHUUUT?! According to Joy of Baking, the French term ganache refers to “a smooth mixture of chocolate and cream.” Melting chocolates would usually require you to use a double boiler. However, this recipe we devised doesn’t require that.

Ingredients:

  • 1 tablespoon corn, vegetable, or canola oil
  • 1 kilo semi-sweet chocolate, chopped (or in the form of chips)
  • 1 can all-purpose cream
  • half cup strong brewed coffee or coffee liqueur – optional

Procedure:

  1. Heat the oil over very low fire using a non-stick pot.
  2. Add the chocolate and the brewed coffee or coffee liqueur.
  3. Stir the chocolate while it melts.
  4. Once the chocolate is melted, add the cream.

After making the ganache, you are now ready to make your Chocolate-Covered Marshmallows.

Ingredients and Materials

  • Ganache
  • 1 (or 2) Large pack of marshmallows (best to use the large sized marshmallows)
  • Lollipop or popsicle sticks
  • Candy sprinkles
  • Trays or plates lined with wax paper
  • 3 – 5 heads of cabbages wrapped with aluminum foil

Procedure

  1. Stick one or two large marshmallows on the lollipop or popsicle sticks.
  2. Dip in the ganache.

  4. Lay down on the tray lined with wax paper.
  5. After the ganache hardens in around 10 – 20 minutes, stick to the cabbage head.
  6. Sprinkles on top

  7. Put candy sprinkles on top. Use sprinkles that will fit your party’s theme or motif. Some candy or baking supplies stores sells sprinkles in different colors and shapes.

Note:
If the ganache hardens while you are still in the process of dipping marshmallows, reheat the ganache over very low heat.
