Balamban Liempo from the Ngoyong Haus

My cousin excitedly called me to go down to eat dinner because he bought something he has been craving for: Balamban Liempo.

And I was floored. After my first bite, I just had to get my phone to take photos. It was that good! Seriously!

Liempo is pork belly. In the Philippines, it is usually prepared by marinating and grilling.

Balamban liempo is popular in Cebu. The pork belly is slowly roasted in what I assume to be a turning fork, so the belly skin roasts in a way similar to the skin of lechon (roast pig). It is roasted with herbs and spices. The flavors I recognized is that of lemon grass, garlic, and chili. The mix of herbs gives the Balamban liempo a distinct flavor that reminds me of lechon. Very, very, veryyy tasty!

The Balamban liempo is served with and tastes really good with some vinegar. It kinda masks the fat. and complements the herbs and spices.
