Parmigiana is originally made with eggplants layered in such a way that it resembles the shutters of a window. From this visual, the dish was named “parmigiana” an adaptation of the word “parmiciana” meaning window shutters.

An eggplant parmigiana is usually layered with tomato sauce then topped with cheese which is usually mozarella or parmesan. Various incarnations of parmigiana include veal parmigiana or chicken parmigiana usually made with boneless chicken breast fillet. These may be served with pasta or rice.

The variation of Cafe Demitasse takes inspiration from chicken parmigiana. Cafe Demitasse Chicken Pesto Parmigiana consist of thinly sliced skinless, boneless breast fillets, deep fried with a crispy batter, smothered with pesto sauce, and topped with parmigiano regiano cheese.

The chicken fillet and the pesto sauce are both not too oily. The cheese’s saltiness complement the fried chicken and the pesto’s herby taste.

It is served with rice and some side veggies.

The Chicken Pesto Parmigiana is a light dish which you can enjoy with Cafe Demitasse’s coffee and tea drinks. A new fun twist to an Italian favorite.

    yummy talga ito…first time I had this, I had to order another one coz the bf wanted “a taste” of it and ended up finishing it all..lol!
