I finally graduated from the Center for Asian Culinary Studies (CACS) Davao last September 24, 2009. My class was Batch 9 of the school’s Certificate Program in Basic Skills in Cooking and Baking. Our class culminated with a night of good food, fellowship, and a graduation ceremony.

Our class, Cucina Nueve, served up delectable hot and cold dishes and yummy pastries during our Legacy Buffet last September 24, 2009 at the Linmarr Apartelle Function Hall. After dinner was served, Chef Toto Erfe and Honeylet Lim called on selected members of the class who were awarded with Bronze and Silver Awards. SURPRISE!

July 13, Mon - EASY THAI. Let Chef Toto Erfe wow you with these authentic thai dishes: Tom Yum Thalay, Salt-crusted dalag with Mam Nem Sauce, Shrimp and Pork in Lemongrass Sticks, Thai Wedding Curry, Khao Pod Sapparot and Ruamit.
Fee: Php 1500.00 (inclusive of ingredients) at 6-9 PM.

July 14, Tue - PIZZA & PASTA WORKSHOP. Café Ysabel Chef, Chef Toto Erfe will be teaching us basic pizza and pasta dough with sauces that can be used on pizza and on pasta at the same time. Recipes include Sausages and Caramelized Onion, Pesto-Tomato with Peppered Shrimp Sauce, Bacon and Cheeseburger Sauce, Truffle Scented Three Mushroom Sauce, Pepperoni, Salami and Roasted Pepper Sauce and Classic Puttanesca Sauce. Fee: P1,400.00 (inclusive of ingredients) at 6-9 PM.

July 15, Wed - EASY COFFEE SHOP DESSERTS from the HOT KITCHEN. Experience this not-your-usual-but-easy-coffee shop desserts recipes from Chef Toto Erfe. Recipes includes: Apple Raisin and Walnut Spanakopita, M&M’s Panacotta, Sour Tarts, Cheese Rolls, Biscotti and Coconut Bars

Today, I received an SMS regarding my first day of culinary classes at the Center for Asian Culinary Studies (CACS) Davao. I have enrolled for their Certificate Program for Basic Cooking and Baking Skills, and we begin the weekly classes this Saturday. I have been reminded to be on time and wear the appropriate attire: black pants, white top, and no slip closed black shoes.

We have to be there 15 minutes before classes start because our uniforms, kits, and manuals will be distributed. I have seen the partial list of our class, and I am afraid I do not know anybody.
